Miso Mackerel
INGREDIENTS
Mackerel
5g Ginger
1/8 cups Sake
2 Tbs Sugar
1/2 Tbs Mirin
50g Miso
10 g Red Miso
PREPARATION
Bowl 1:
Mix in a Bol
1 1/4 Cups of water + Sake + Sugar
Bowl 2:
Mix well in a Bol
Mirin + Miso + Red Miso
Cut the mackerel in half and make 1cm incision into the skin. For the ginger, cut into thin slices.
In a pot boil enough water, to just cover the Mackerel. Bring to low heat and dance the fish in hot water, for 30 sec. This helps remove impurities and neutralize the smells. Shock into ice water. Pat dry with paper towel and leave aside.
Into a frying pan add bowl 1, bringing it to a boil. Introduce the mackerel, at medium fire for 7-8 min. Remove bubbles as they appear. On top of the mackerel add bowl 2, as well as the ginger. Make a top lid with foil, for 7-8 min.
Remove the top, letting it simmer until sauce thickens.
