Salted Fish in the Oven

 

INGREDIENTS

500g fish ( Sea Bass, Sea Bream, Watchman,...)

1kg Coarse salt (2kg of salt for every 1 kg of fish)

1 Lemon

Herbs (dill,chives, lemon balm, parsley,..)

 

PREPARATION

  1. Make sure the fish is cleaned.

  2. Prepare a few slices of lemon and some herbs

  3. Create a base of salt in an oven tray.

  4. Place the fish on top of it.

  5. Fill the belly with the lemon and herbs.

  6. Cover the top with the remaining salt.(it is recomended to wet the salt with water or egg whites for the salt to be more compact). You should no longer be able to see the fish.

  7. Preheat the oven to 200C (roughly 392 F) and cook for 20 minutes. ( 20 min for every 500g of fish)

  8. Break the crust of the salt and separate the fillet.

  9. Serve with lemon and virgin olive oil to bring out more flavor and aroma.
