Simmer beef with enoki and ginger

 
 

INGREDIENTS

300g thinly sliced beef

1 knob Ginger

1 bunch Enoki

2 tbs Sake

2 tbs Mirin

2 tbs Soy sauce

1 tsp Sugar

 

PREPARATION

  1. Cut the beef into 5 cm pieces (2-inch). Set aside.

  2. Peel and cut the ginger in julienne. Set aside as well.

  3. Cut the end of the enoki and separate them. Put aside too.

  4. Let’s make the seasoning in a small bowl add 2 tbs sake, 2 tbs Mirin, 2 tbs soy sauce and 1 tsp sugar. Mix well and set aside.

  5. In a medium saucepan at medium heat add the seasoning sauce follow by the ginger. Bringing it to a simmer.

  6. Spread the meat and place the enoki on the beef, simmering in low heat for 5 minutes. The enoki cooks faster so it helps to give the meat longer to soak the sauce. Letting the sauce reduce down to an intense the flavor in the broth, wait until the liquid is almost gone and serve over rice.
